OUR PHILOSOPHY

At The Smoke House Komodo, every dish begins with the fire.

Our meats are smoked fresh in small batches using a blend of woods from across Indonesia. Jackfruit and Mango wood from Labuan Bajo, and Apple from the cool hills of Ruteng, Flores. Each chosen for its distinctive aroma and depth of flavor.

Everything you taste here is made in-house. The sauces, the rubs, the bread, the sides. All of it. Because anything less would be cutting corners on an evening that deserves better.

Because for us, smoke is not just a method, it’s a language.
